Workshops make thoughtful gifts for adults and children & are wonderful occasions for family, friends and co-workers to gather, learn and have fun in a real working bakery, during our lively, informative workshops.

Suggestions for participants:
Parking: ample off-street parking is available, beside and behind our Bakery, located at 30 High Street in Norwalk, CT  06851.
Clothing: wear rubber-soled shoes
Snacks: The bakery smells so good that appetites get very stimulated. All workshops include a healthy snack and drink for each participant.
For all participants:
A loaf of Wave Hill Breads' fresh bread is included for each participant or adult/child pair, per workshop.

The Magic of Wild Yeast Sourdough

  • Saturday January 13, 3:30-5:30 - FULL
  • Saturday February 3, 3:30-5:30 - FULL

Learn techniques for baking with sourdough leaven, as well as how to control the degree of tartness you prefer in your breads. This class will cover care and feeding of sourdough starters, as well as shaping, scoring, and steam baking of traditional sourdough batards. You will create your own starter to take home at the conclusion of the class.

An overview of the history and health benefits of eating sourdough bread will be discussed. Participants will have hands-on training in the shaping and baking of our Wild Yeast Sourdough batard, a bread made from naturally occurring yeast and bacteria, found on the grain itself. There's no added yeast, no milk, no oils, and no sweeteners used in this method ... it's about as natural as you can get.


Bread and Broth: The Perfect Pair

Join Nit Noi Provisions owner, North Shutsharawan and Wave Hill Breads in a collaborative workshop that will cover the making of vegetarian and bone broths, and the perfect bread to pair with soups made from these exquisite the broths. Emphasis will be on using locally sourced ingredients. Participants will learn methods for making broth and the perfect breads to pair with them.  Winter soup recipes will be discussed, as well as where to source ingredients for soup-making.

Beauty and the Baguette

  • Saturday, February 17 3:30 - 5:30 – Valentine's Day Special 

Tame the beastly (and challenging)  baguette with this hands-on class to help you make the best possible baguettes in your home oven. During the class you'll learn how to work with a pre-fermented dough to achieve maximum flavor, mix a traditional baguette dough, get experience shaping and scoring loaves and learn steam baking techniques.

Go Bananas with Monkey Bread 1 child with 1 adult

Wave Hill Breads' popular Monkey Breads are filled with our handmade butter croissant puff pastry, cut into bite-size pieces, dredged in cinnamon and brown sugar … and baked to perfection. They are absolutely delicious, and a consistent sell out at farmers' markets. Children and parents will receive hands-on guidance in the creation of our famous "monkey bread” - a treat easily baked at home with the entire family! While the monkey bread are proofing, a special three grain Baker's Pizza, made with fresh local ingredients will be demonstrated for kids and parents to share and enjoy.

Bento Lunch Box Ideas: Fun with Fresh Breads 1 child with 1 adult

  • Sunday, January 28, 12:30 - 2:30

Working with our fresh sliced Honey Whole Wheat and Buttermilk White breads, kids and parents will create sushi-style sandwich roll-ups, using locally sourced, healthy fillings. Kids will make their own decorative bento-style picks. Kids will leave the workshop with a prepared Bento Box lunch, decorative elements, a recipe info sheet and a list of online resources for bento box supplies and ideas.

P.S. – Adults love Bento Box lunches too! A special three grain Baker's Pizza Made with fresh local ingredients will be demonstrated for kids and parents to share and enjoy.
